Evolution of the player, surface, type of tournament, bad matchups, schedule, weather, injuries, personal life - all these criteria and even more can have a big impact on the outcome of a tennis match. For example, in football - a top team can still have good results even if it loses 1 or 2 key players because of injuries, but in tennis - an injury can have a strong impact on the tennis player and can affect his moral, the results and development even after recovery.

The point is that statistics can be helpful if you use them as tools and combine them with other criteria when doing a complex analysis of a team/player and its winning chances. Also, analyzing statistics is different for each sport, for example - while with some sports it can help a lot to know the head to head results, with others it doesn't help at all.
